According to Wikipedia various explanations are given for the name, presumably derived from a member of the important Stroganov family, perhaps Alexander Stroganoff of Odessa or a diplomat, Count Pavel Stroganov. An alternative explanation relates the name to the verb “strogat” (to shave), after the shaved meat used in the dish.

Beef Stroganoff Recipe
Ingredients
- 450g Rump or Sirloin Steak trimmed of all the fat
- 1 large Onion thinly sliced
- 250g Mushrooms, sliced
- 284ml Soured Cream or Double Cream
- 1 large tbsp of quality Mustard
- Salt and Pepper to taste
- White Wine
- Long Grain Rice (enough to serve 2)
The Preparation
- Cook rice separately
- Add Mustard to Cream or Soured Cream
- Add White Wine according to taste
- Add Beef to a very hot pan
- Wrap Beef in foil when browned - set aside
- Add Onions to same pan on high heat until soft
- Add a little more oil if necessary
- Add Mushrooms
- Add Beef when Mushrooms cooked through
- Add sauce to Mushrooms and Beef
- Cook further on medium heat until sauce is thick
- Serve on a bed of rice
It exists many variations of the Beef Stroganoff recipe - with or without wine, with canned sweet corn, with ketchup instead of tomato sauce and further with even more culinary imaginative results. Beef Stroganoff is truly an excellent dish for experimenting and it is not complicated and it doesn’t take a lot of time to prepare.
